Ammonium Chloride, an efficient nitrogen source of microzyme

Ammonium Chloride, as an efficient nitrogen source of microzyme, is mainly used in brewage of alcoholic beverages and soy sauce.
 
                                     
 
Taking white wine active dry microzyme as a testing example, cultivate it in three different nitrogen sources with same ammonium concentration: ammonium chloride, urea, ammonium nitrate. Then observe dry microzyme’s production in the yield and get its weight. Thus analyze the nitrogen’s utilization and its effect on the growth of microzyme. The result showed that the best medium was ammonium chloride of the three. The microzyme cultivated by ammonium chloride grew much faster than in the other two nitrogen sources.
